Pams Prep Kitchen: A Pams BBQ Christmas

Utilising your outdoor barbeque is a great way to make the most out of the warm summer weather and get you in the festive spirit. Prepare your entire Christmas feast on the BBQ and find how your favourite finger foods, mains and even desserts can be easily pulled together on your trusty grill.

This form of cooking is super accessible and easy to manage - just ensure you are well prepped so you’re ready to go when it’s time to get on the grill. With smokey, punchy flavours and quick clean-up, a BBQ’d Christmas will be one for the history books!

Top tips to ensure your Christmas BBQ goes smoothly:

Timing is everything and the best game plan for Christmas is exactly that – to make a plan. Prepare as much of your Christmas feast the day before, or in the morning, so your focus is on perfecting the meat and finishing off the veggies on the BBQ in time for serving!
- Blanch the vegetables so they can be easily grilled on the day.

- Marinade your meats the day before.
- Make your salads in the morning but leave off the dressing to prevent sogginess.
- For a simple side or starter, cook Pams Buffet Rolls on the BBQ until toasted evenly on all sides.
- If you don’t have time to marinade everything the night before, try pre-marinated steaks such as the Pams Argentine Picanha Steaks!

How to butterfly a chicken:

‘Butterflying’ a chicken is a technique where the backbone of the chicken is removed from the body and the chook is laid out flat. This can seem a daunting task for beginners, but there’s no need to be intimidated – it's super simple and the rewards are so worth it! The butterflying technique makes chicken cook much faster than when it’s whole, while still keeping the wholesome roasted flavours and juicy texture.

Follow this easy step by step guide about how to butterfly a Pams Whole Chicken.

1. Place the chicken breast side down on a clean chopping board.
2. Using sharp kitchen scissors, cut along both sides of the chicken backbone.
3. Remove the backbone, and discard or save for your next stock.
4. Using a sharp knife make a small cut through the breastbone.
5. Flip the chicken over and, using the heel of your hand, press firmly on the breastbone to flatten the chicken.
6. Place on a rimmed baking dish or tray to prepare for the marinade.

Our take on the classic surf ‘n’ turf is oh-so-simple without compromising on flavour! Simply grill these crowd pleasers earlier in the day and warm them back up in time for serving. Jazz up your presentation and boost the flavour by throwing a couple of lemon halves on the grill while your skewers are cooking.
