This can seem a daunting task for beginners, but there’s no need to be intimidated – it's super simple and the rewards are so worth it! The butterflying technique makes chicken cook much faster than when it’s whole, while still keeping the wholesome roasted flavours and juicy texture.
Follow this easy step by step guide about how to butterfly a Pams Whole Chicken.
1. Place the chicken breast side down on a clean chopping board.
2. Using sharp kitchen scissors, cut along both sides of the chicken backbone.
3. Remove the backbone, and discard or save for your next stock.
4. Using a sharp knife make a small cut through the breastbone.
5. Flip the chicken over and, using the heel of your hand, press firmly on the breastbone to flatten the chicken.
6. Place on a rimmed baking dish or tray to prepare for the marinade.
