The traditional Christmas spread in the middle of a Kiwi summer just isn’t that appealing. Lucky for us, the middle of Winter is this weekend – an opportunity to host a mid-winter Christmas celebration and enjoy a delicious, warming feast with friends and family.

The heart of any good celebration is the food, so here are some tips for satisfying big appetites on cold days with your mid-winter festivities.

The Turkey

Nothing says Winter and Christmas quite like a stunning turkey. Our Pams Finest Boneless Stuffed Turkey Roast is packed with a more-ish cranberry and apple stuffing. Not fancy enough? Make it a show stopping centre-piece with an easy cracker crumble. Simply brush the cooked roast with a brown sauce and top with roughly chopped dried cranberries, shelled pistachios, fresh orange zest and crumbled pork scratchings before serving piping hot.

Bake your turkey with extra slices of freshly cut orange, star anise and cinnamon bark to create a tasty dish that’s bound to receive compliments.


There’s no reason why vegetables should be a sad accompaniment everyone feels obligated to eat. Level up your vege game with maple syrup caramelized carrots - guests will be picking them off the platter before the turkey is even carved. Take ½ a bag of Pams carrots, quarter them and spread them out a tray. Careful not to crowd them – you want them golden and delicious, not steamed and floppy. Drizzle four tablespoons of Pams Finest Maple Syrup, a dash of oil and a good slosh- about 1/3 cup - of orange juice over the carrots. Scatter over orange slices and a crushed cinnamon stick. Bake at 180C for 35 minutes or until the carrots are golden and just cooked.

Brussel sprouts often get a bad rap, especially with the little members of your family. To convert even the fussiest of eaters, cut Pams Brussel Sprouts in quarters and sauté them in a frying pan with butter and diced bacon until they’re tender. Top with the zest and juice of a lemon and plenty of shaved Parmesan cheese.

When creating your perfect feast, it’s a great idea to serve sides that take little time to prepare but taste great.
