Fuss-free and full of sweet & juicy blueberries, these easy 3 ingredient muffins take the cake for being a busy person’s bake!
Tips & Tricks
- Sprinkle Pams Raw Sugar over top of your muffins before baking for extra golden and crispy tops.
- The muffin batter will be quite thick, so try using an ice cream scoop to scoop the batter into the muffin trays!
Method
Add the ice cream to a large mixing bowl and allow it to soften, but not melt entirely. Add the blueberries and gently fold through the ice cream.
Add the flour and fold to combine.
Spoon about ¼ cup of mixture into each of the 12 standard size muffin tin cups.
Bake at 190°C for 30 minutes. Place on a cooling wire to cool, then enjoy.
