For a bite-sized twist on a Kiwi classic, these Chocolate Cornflake Bliss Balls will become your new go-to sweet snack!
Tips & Tricks
- For a golden nuttier flavour, toast your walnuts in the oven for 175°C for 7 minutes until lightly toasted before adding it to the mix!
- These become vegan and dairy-free without the chocolate topping!
Method
Set aside 12 walnut halves for decorating and place the remaining walnuts and the cocoa powder in a food processor. Blitz until you have a fine crumb.
Add the dates and almond butter and blend until smooth. Add the cornflakes and pulse until just combined.
Roll the mixture into 12 tablespoon-sized balls and place on a lined tray.
In a heatproof bowl, microwave the chocolate in 30 second bursts until melted and smooth.
Drizzle the chocolate on top of the balls and press a walnut onto the melted chocolate.
Put in the fridge to set before enjoying. Keep stored in the fridge in an airtight container.
