Honey Soy BBQ Chicken & Rice Salad

Quick, super simple, and equally delicious. These sweet & sticky drumsticks on rice salad will be the hero of your mid-week mayhem – get your whānau ready for a new staple weeknight dinner. For a fuss-free alternative, you can even use a couple pouches of Pams Jasmine Instant Rice!

Ingredients

  • 8 Pams Tender Basted Chicken Drumsticks, defrosted
  • 1 cup Pams Honey Soy Simmer Sauce
  • 2 tsp Pams Crushed Ginger
  • 2 cups Pams Jasmine Rice
  • 1/2 bag Pams Superfoods Super Slaw
  • 2 Pams Spring Onions, finely sliced

Method

  1. Place the simmer sauce & half the crushed ginger in a large bowl and mix to combine. Season with salt & pepper. Add the chicken drumsticks and toss to coat. Leave to marinate for as long as you can (put them in the fridge if marinating for any longer than 30 mins).
  2. While the chicken is marinating, cook the rice as per packet instructions and leave to cool.
  3. Place the drumsticks on a lined baking tray, shaking off any excess marinade. Bake in the oven at 190°C fan bake for 25-30 minutes, or until cooked through and browned. Alternatively, barbeque the drumsticks over a medium heat for 30 minutes, turning regularly.
  4. Season the rice with salt & pepper and stir through the remaining ginger and sliced spring onions. Add the superfoods slaw and toss to combine.
  5. Serve the chicken drumsticks on top of the rice salad.
