Chocolate Chip Cookie Ice Cream Sandwiches

These choc chip ice cream sandwiches are the ultimate handheld dessert for the summer. Keep them in the freezer and grab one whenever you’re ready for a treat!

Tips & Tricks
  • This recipe works great with any flavour of Pams Ice Cream – we love chocolate, cookies & cream or even boysenberry ripple!
  • Get creative with toppings – try dipping the chocolate dunked area in sprinkles, coconut or any chopped nuts.

Ingredients

  • 1 pack Pams Finest Dark Chocolate Chunk Cookies
  • ½ tub Pams Creamy Vanilla Ice Cream
  • 1 block Pams Finest Dark Chocolate
  • 1 x 70g pack Pams Chopped Peanuts

Method

  1. To make the ice cream cookie sandwiches, place 1 scoop of ice cream between two cookies. Gently press the cookies together so the ice cream spreads to edge of the cookies. Repeat with remaining cookies and ice cream, then place in the freezer to firm up.
  2. Place the chocolate in a microwave-safe bowl. Microwave on high for 2 minutes, stirring every 30 seconds, or until smooth. Pour the chopped peanuts into a shallow dish ready for dipping.
  3. Working one at a time, dip half of the sandwich into the melted chocolate, letting any excess chocolate drip off before pressing into the chopped peanuts. Place on a lined tray or plate and repeat with remaining ice cream sandwiches. Return to the freezer for at least 30 minutes until hardened.
