Moroccan Spiced BBQ Tofu Platter

Whipping out the barbie doesn’t have to meat-exclusive! These BBQ’d tofu skewers and charred pita make for an easy dinner or beautiful lunch spread for these warmer days.

Tips & Tricks
  • Add sliced red onion to your salad for an extra flavourful kick!
  • Most Moroccan spice mixes are vegetarian-friendly but it’s always good to check! You can also make your own mix using a combination of ground cumin, ground coriander, ground cinnamon, ground cloves, ground ginger & paprika.

Ingredients

  • 1 block Pams Plant Based Firm Tofu, cut into 2cm cubes
  • 3 Tbsp Moroccan spice mix
  • 1 pack Pams Wholemeal Pita Bread
  • 1 Pams Baby Cos Lettuce, chopped
  • 1/2 punnet Pams Cherry Tomatoes, cut in half
  • 1 punnet Pams Pumpkin Hummus

Method

  1. Place the tofu cubes into a medium-sized bowl and drizzle with oil. Sprinkle over the Moroccan spice and season with salt and pepper, tossing gently to coat. Pierce 3 cubes of the seasoned tofu onto each skewer. Set aside.
  2. Bring your BBQ to medium-high heat. Grill the pitas for a couple of minutes on each side, before wrapping in a clean towel to keep warm.
  3. Grill the tofu skewers on a high-heat for about 30 seconds each side, until charred and golden.
  4. Add the hummus, chopped cos and tomatoes to a large serving platter. Arrange over the grilled pita and skewers.
