No-Bake Caramel Slice

Make afternoon tea time roll around extra quickly with this no-bake caramel slice. The perfect sweet treat that can be whipped up and left to set in no time!

Tips & Tricks
  • Add a little sea salt to the caramel mixture and a sprinkle on top of the chocolate to make a salted caramel slice!
  • Add 1 tablespoon of vegetable or coconut oil to your melted chocolate to help make the mixture smooth and pliable when it sets – and it’s easier to slice!

Ingredients

  • 1 packet Pams Chocolate Digestives
  • 3/4 cup Pams Desiccated Coconut
  • 250g Pams Pure Butter
  • 1 ½ cups Pams Brown Sugar
  • 1 tin Pams Sweetened Condensed Milk
  • 1 packet Pams Finest Dark Chocolate

Method

  1. Add the digestives, desiccated coconut and 100g of melted butter to a food processor and blitz until it becomes a fine crumb. Press the crumb mixture into a 20 x 20cm baking tin lined with baking paper and place in the fridge to set.
  2. Add the remaining butter and brown sugar to a pot on medium-high heat, stirring constantly until all the sugar has dissolved. Add the condensed milk and bring to a boil, before reducing the heat and simmering for 5 minutes, stirring constantly to avoid sticking. Pour the caramel over the biscuit base and place in fridge to set for at least 30 minutes.
  3. Gently melt the chocolate in a heatproof bowl over a saucepan of simmering water, or in the microwave in 30 second intervals, whisking until smooth.
  4. Pour the melted chocolate over the set caramel layer. Place in the fridge for 30 minutes, or until fully set. Cut into slices and serve.
