No-Bake Caramel Slice
Make afternoon tea time roll around extra quickly with this no-bake caramel slice. The perfect sweet treat that can be whipped up and left to set in no time!
Tips & Tricks
- Add a little sea salt to the caramel mixture and a sprinkle on top of the chocolate to make a salted caramel slice!
- Add 1 tablespoon of vegetable or coconut oil to your melted chocolate to help make the mixture smooth and pliable when it sets – and it’s easier to slice!
Ingredients
- 1 packet Pams Chocolate Digestives
- 3/4 cup Pams Desiccated Coconut
- 250g Pams Pure Butter
- 1 ½ cups Pams Brown Sugar
- 1 tin Pams Sweetened Condensed Milk
- 1 packet Pams Finest Dark Chocolate
Method
- Add the digestives, desiccated coconut and 100g of melted butter to a food processor and blitz until it becomes a fine crumb. Press the crumb mixture into a 20 x 20cm baking tin lined with baking paper and place in the fridge to set.
- Add the remaining butter and brown sugar to a pot on medium-high heat, stirring constantly until all the sugar has dissolved. Add the condensed milk and bring to a boil, before reducing the heat and simmering for 5 minutes, stirring constantly to avoid sticking. Pour the caramel over the biscuit base and place in fridge to set for at least 30 minutes.
- Gently melt the chocolate in a heatproof bowl over a saucepan of simmering water, or in the microwave in 30 second intervals, whisking until smooth.
- Pour the melted chocolate over the set caramel layer. Place in the fridge for 30 minutes, or until fully set. Cut into slices and serve.
