Sausage & Broccoli Spaghetti Frittata

For a creative way to use up leftover pasta, this frittata makes a foolproof lunch or dinner that the whole family will love!

Tips & Tricks
  • For added flavour, sauté a clove of diced garlic and ½ a diced onion in your pan before adding the sausage!
  • You can use any type of leftover pasta in this recipe!

Ingredients

  • 2 – 3 pork sausages, casings removed
  • 1 head broccoli, cut into florets
  • 4 cups leftover spaghetti
  • ½ cup Pams Grated Tasty Cheese
  • 2 cups Pams Baby Spinach
  • 5 x Pams Free Range Eggs, whisked

Method

  1. Heat a splash of oil in a frypan over medium-high heat. Add the sausage and use the back of a wooden spoon to break them up into pieces as it browns in the pan.
  2. Add the broccoli and continue cooking until just tender. Season with salt and pepper and transfer to a large mixing bowl.
  3. Add your leftover spaghetti, grated cheese, baby spinach and whisked eggs to the bowl. Toss until everything is well combined and coated in the egg mixture. Transfer to a greased baking dish or cast-iron skillet.
  4. Bake in the oven at 180°C for 25 - 30 minutes or until cooked through, with the spaghetti starting to turn golden on top. Leave to cool slightly before slicing into wedges and serving.
