Sugar Free Baby Banana Muffins

Naturally sweetened and mini in size, these banana muffins are the perfect snack for little hands. Get the kids in the kitchen to help and learn some new kitchen skills!

Tips & Tricks
  • Make these muffins dairy-free by substituting the melted butter for melted coconut oil.
  • If you want to hide the dates in the muffins, blitz the dates and water in a bullet blender after they have finished soaking.

Ingredients

  • ½ cup Pams Pitted Dates, finely chopped
  • 2 large brown bananas
  • 1 x Pams Egg
  • 1 tsp Pams Vanilla Essence
  • ½ cup Pams Pure Butter, melted
  • 2 cups Pams Self Raising Flour

Method

  1. Place the dates in a bowl and pour over ½ cup hot water and let soak for 10 – 15 minutes.
  2. In a large bowl, mash the bananas with a fork. Add the egg, vanilla essence, melted butter, and soaked dates with the water and mix to combine.
  3. Sift in the self raising flour and fold to combine.
  4. Spoon into lightly greased mini muffin trays and bake in the oven at 180°C for 15 minutes.
