Plant Based Caesar Salad

Looking for the creaminess and tanginess that a regular Caesar salad gives you, but without meat or cheese? This plant-based alternative to the classic fan favourite will definitely tickle your fancy.

Ingredients

  • 1 packet Pams Plant Based Crumbed Tenders
  • 4 Pams Par Baked Buffet Rolls, sliced into rounds
  • 2 Pams Avocados
  • 1 tsp Pams Wholegrain Mustard
  • 1 Pams Lemon, juiced
  • 2 bags Pams Baby Cos

Method

  1. Place the tenders and croutons on a large baking tray. Drizzle the croutons with oil and season with salt & pepper. Place the tray in the oven at 200 degrees for 14 minutes. Tirn the tenders halfway through cooking.
  2. Add half of one of the avocados to a blender with the mustard and lemon, as well as a big glug of olive oil. Season well and blend until smooth and silky. If you need to make the mixture looser, add some more oil.
  3. Slice the remaining avocados and the tenders.
  4. Assemble the salad on a large platter, starting with the cos lettuce and then build on the chicken, avocado, and croutons, and then finish with the dressing. Serve immediately.
