Tips & Tricks

Add a sprinkle of sesame seeds & serve with rice!

Method

  1. In a large mixing bowl, add the chicken, the egg, 1 tbsp soy sauce and the zest & juice of 1 lemon. Stir to combine and leave to marinate for at least 10 minutes.

  2. Add the honey, remaining soy sauce and remaining lemon zest & juice to a small saucepan and bring to a simmer. Add 1 tsp corn flour to small bowl with a splash of water and mix to make a slurry, then add to the honey sauce. Mix until thickened then remove from the heat and set aside.

  3. Add the remaining ¾ cups corn flour to the marinating chicken and mix to create a batter.

  4. In a large wok, saucepan or high-sided fry pan, heat enough vegetable oil to shallow fry the chicken. Working in batches, fry the chicken pieces, turning occasionally, until golden brown and cooked through, about 3 - 5 minutes.

  5. When the chicken is all cooked, toss it through the sticky honey sauce and serve immediately.
