Watermelon and Mozzarella Salad

Ingredients
- ¼ watermelon
- 1 small handful fresh mint, thinly sliced – plus extra for serving
- 1 Pams Lemon, zest & juice
- 1 tsp Pams Squeezable Liquid Honey
- ½ Telegraph Cucumber, peeled in ribbons
- 1 tub Pams Finest Mozzarella, drained
Method
- Slice the watermelon into small thin triangular pieces and remove the skin.
- Add the mint, lemon zest & juice, honey, and a big glug of olive oil to a small bowl. Season generously with lots of salt & pepper and mix well.
- Assemble the salad by layering slices of watermelon, cucumber, and torn mozzarella. Drizzle over the mint dressing.
