
Watermelon and Mozzarella Salad

The fresh combo of watermelon and mozzarella drizzled in a sweet and zesty dressing just sings of summer. Get ready for this quick & easy no-cook salad to become your new BBQ go-to.
Tips & Tricks
- For extra crunch and texture, add a ¼ cup of toasted Pams Pine Nuts to your salad.
- Add a handful of thinly sliced red onion for extra flavour and zing!
Method
Slice the watermelon into small thin triangular pieces and remove the skin.
Add the mint, lemon zest & juice, honey, and a big glug of olive oil to a small bowl. Season generously with lots of salt & pepper and mix well.
Assemble the salad by layering slices of watermelon, cucumber, and torn mozzarella. Drizzle over the mint dressing.
