Cheat's Berry Mille Feuille

Impressive-looking yet achievable, try out this berries & cream mille feuille as the perfect sweet treat to savour the taste of summer.

Tips & Tricks
  • You can use any kind of frozen berries - raspberries or blackberries would also work well!

Ingredients

  • ½ bag Pams 500g Frozen Boysenberries
  • ½ cup Pams Icing Sugar
  • 2 ½ sheets of Pams Puff Pastry, thawed
  • 1 x Pams Free Range Egg, beaten
  • 250ml Pams Fresh Cream

Method

  1. Pre-heat the oven to 200°C.
  2. Add the boysenberries and icing sugar to a pot and cook on medium-high heat for 10 mins. Reduce the heat to medium and cook the berries until thick and jammy. Mash with a fork and turn off the heat. Allow to cool.
  3. Cut the 2 whole pastry sheets into 8 rectangles, and the half sheet into 4 rectangles. Place on a baking paper lined tray and lightly brush with the beaten egg. Top with an additional layer of baking paper and sit a second baking tray on top – sandwiching the pastry sheets flat. Bake for 15-20 minutes until golden and crisp. Leave to cool.
  4. Using an electric beater or whisk, whip the cream until it forms stiff peaks.
  5. To assemble the mille feuille, spread a layer of cream onto a sheet of the pastry. Spoon on some of the berries and sandwich with another layer of pastry. Repeat with another layer of the same combo before adding the final sheet of pastry and finishing with dusting of icing sugar. Serve immediately.
