Cornflake Breakfast Bars

For some on-the-go energy, these cornflake breakfast bars are the perfect option. Packed with crunchy cornflakes and all kinds of morning goodies, your family will love waking up for one of these!

  • Try using any nuts or seeds you have in the pantry!
  • To turn these into a more decadent treat, dip the bottoms in melted Pams Finest Dark Chocolate.

Ingredients

  • 3 cups Pams Cornflakes
  • ½ cup Pams Desiccated Coconut
  • 70g pack Pams Whole Almonds, roughly chopped
  • ¾ cup Pams Smooth Peanut Butter
  • ¼ cup Pams Honey
  • 2 Tbsp Pams Coconut Oil

Method

  1. Add the cornflakes, coconut and chopped almonds to a large bowl and mix to combine.
  2. Add the peanut butter, coconut oil and honey to small saucepan. Place over a medium heat and bring to a boil. Reduce the heat to low and let simmer for 2 minutes, stirring continuously.
  3. Pour the peanut butter mixture over the cornflakes and mix until everything is well coated.
  4. Press the mixture into a lined 8 x 8 inch slice tin.
  5. Place in the freezer for 10 minutes until set, then slice. Keep stored in the fridge for ultimate crunch!
