Cranberry and Brie Cob Loaf

Bring a whole new level of melty cheese goodness to your table this Christmas with this festive cobb loaf. Topped with sweet cranberries and fragrant thyme, it’s an easy showstopper ready to dig into!

Tips & Tricks
  • Add some Pam's honey and/or butter into the garlic mixture for extra decadence.
  • Garnish with some sprigs of fresh rosemary.

Ingredients

  • 1/3 cup Pams Dried Sweetened Cranberries
  • 1 round medium-sized cob loaf
  • 1 Pams Classic Brie Cheese
  • ¼ cup Pams Pure Butter, softened
  • 4 cloves Pams Garlic, crushed
  • a few sprigs of thyme, finely chopped

Method

  1. Place the cranberries in a small bowl and pour over ½ cup boiling water. Leave to sit until they’re plump and juicy. Drain and set aside.
  2. With the loaf on a chopping board, place the cheese on top and trace around it with a serrated knife to create a hole deep enough for the brie to sit in. Slice the sides into segments like a pizza, not going all the way through.
  3. Place the softened butter in a bowl and mix in the garlic and thyme. Season with salt & pepper.
  4. Brush the garlic butter into the cut-out slices of the bread, then place the brie in the centre hole. Place the plumped cranberries around the brie, pushing into the crevice between the cheese and the bread. Bake for 20 mins at 200°C until golden and the cheese is bubbling.
