Loaded Alfredo Cauliflower Cheese

With streaky bacon and mozzarella, this cauliflower cheese in creamy alfredo sauce is the perfect comfort food for the colder weather!

Tips & Tricks
Pan-fry extra diced Pam’s Streaky bacon rashers and sprinkle on top for extra crunch!

Ingredients

  • 4 rashers Pams Streaky Bacon
  • 1 small cauliflower or ½ a large cauliflower cut into florets (around 2 cups)
  • 1 Pams Alfredo Pasta Sauce
  • 2 Pams Spring Onions, finely sliced (green tops and the white bases separated)
  • 2 cups Pams Grated Mozzarella

Method

  1. Fry the bacon for about 10 minutes until crispy. Cool and cut into strips.
  2. Blanch cauliflower in boiling water for 2 minutes and drain well.
  3. Place the cauliflower in a medium baking dish. Add the alfredo sauce, half of the grated cheese, the bacon and the whites of the spring onions. Toss to combine.
  4. Bake in the oven at 180°C for 25 minutes.
  5. Add the remaining cheese and place under the grill for about 10 minutes, or until golden.
  6. Sprinkle with the sliced green spring onions before serving.
