Loaded Alfredo Cauliflower Cheese
With streaky bacon and mozzarella, this cauliflower cheese in creamy alfredo sauce is the perfect comfort food for the colder weather!

Pan-fry extra diced Pam’s Streaky bacon rashers and sprinkle on top for extra crunch!Ingredients
- 4 rashers Pams Streaky Bacon
- 1 small cauliflower or ½ a large cauliflower cut into florets (around 2 cups)
- 1 Pams Alfredo Pasta Sauce
- 2 Pams Spring Onions, finely sliced (green tops and the white bases separated)
- 2 cups Pams Grated Mozzarella
Method
- Fry the bacon for about 10 minutes until crispy. Cool and cut into strips.
- Blanch cauliflower in boiling water for 2 minutes and drain well.
- Place the cauliflower in a medium baking dish. Add the alfredo sauce, half of the grated cheese, the bacon and the whites of the spring onions. Toss to combine.
- Bake in the oven at 180°C for 25 minutes.
- Add the remaining cheese and place under the grill for about 10 minutes, or until golden.
- Sprinkle with the sliced green spring onions before serving.
