Ingredients

  • 4-6 fillets of Pams Natural White Fish Fillets, defrosted
  • ½ jar Pams Tikka Masala Simmer Sauce
  • 1 ¼ cups Pams Basmati Rice
  • 2 Tbsp Pams Crushed Garlic
  • ¾ cup Pams Frozen Peas
  • 2 handfuls Pams Baby Spinach

Method

  1. Place the fish fillets on a shallow dish and drizzle over 2 tablespoons of the simmer sauce. Season with salt and pepper and toss to coat. Set aside.
  2. Add a splash of oil to a large fry pan over medium heat. Add the rice and garlic and cook for a couple of minutes until glossy and fragrant. Season with salt and pepper. Pour over 2 cups of water and bring to the boil. Cover with a lid, turn the heat down to low and leave to simmer for 12 minutes, until the rice is almost cooked.
  3. Remove the lid and stir through the peas, baby spinach, remaining simmer sauce and ½ cup of hot water. Layer the fish on top, re-cover and cook for a further 7 minutes until the fish and rice is cooked through.
