Pesto and Brie Stuffed Chicken

Bring a touch of gourmet to your home with these stuffed brie cheese and pesto bacon-wrapped chicken parcels. So delicious, they are sure to impress.

Tips & Tricks

Ingredients

  • 400g pack Pams Boneless Free Range Chicken Breasts
  • 4 tsp Pams Finest Basil Pesto
  • 1 wheel Pams Classic Brie Cheese, cut into 4 slices
  • 4 rashers Pams Streaky Bacon
  • 2 Tbsp Pams Finest Maple Syrup

Method

  1. Slice the chicken breasts in half lengthways to make 4 even fillets.
  2. Spread a teaspoon of pesto over each piece of chicken, then place a slice of brie in the centre.
  3. Roll each piece of chicken around the brie cheese to form a parcel. Then wrap each parcel with a rasher of streaky bacon.
  4. Place the parcels on a non-stick oven tray and bake at 180°C for 20 minutes or until the juices of the chicken run clear.
  5. Take the tray out of the oven and baste the chicken with the juices from the tray. Drizzle over the maple syrup and grill in the oven on high for 10 minutes, or until the bacon is golden.
