Tomato Soup with Spicy Garlic Croutons

Turn up the heat with this spicy twist on a classic winter warmer. Easy, quick and soothing!

Ingredients

  • 4 cloves Pams Garlic, crushed
  • 300g packet Pams Chef’s Mix
  • 2 tins Pams Diced Tomato with Capsicum and Onion
  • 2 cups vegetable stock
  • 2 Tbsp Pams Crushed Chilli
  • 4 Pams Par-Baked Garlic Buffet Rolls

Method

  1. Add a splash of oil to a large saucepan over medium-low heat. Add the garlic and chef’s mix and sauté for 5 minutes until soft and fragrant. Season generously with salt and pepper.
  2. Add the diced tomatoes, vegetable stock and half of the crushed chilli to the saucepan. Bring to the boil, then reduce the heat to medium-low and simmer for about 20 minutes until the veggies are completely soft.
  3. While the soup is simmering, place the remaining crushed chilli into a small bowl. Add a glug of olive oil and season with salt and pepper. Cut the buffet rolls in half, spread with the chilli oil and sandwich back together. Bake in the oven as per packet instructions until crisp and golden. Then, cut into bite-sized croutons.
  4. Leave the soup to cool slightly then, using a handheld blender or food processor, blitz the soup until smooth.
  5. Ladel the soup into bowls and top with the toasted chilli croutons.
