
Carrot and Parsnip Latkes

These golden, crispy latkes are delicious and wholesome – the perfect savoury snack! Our take on these traditional fritters are so tasty that they’ll be gone in seconds.

- Serve with dollops of sour cream, a squeeze of lemon and sprigs of dill as garnish!
Method
Grate the carrots, parsnips, onion and garlic using a grater or a food processor with the grater attachment. Place in a large bowl.
Add the flour and mix through to coat the vegetables. Add the eggs, then mix and season well. Add some chopped coriander and combine.
On medium-high heat add some oil to a large nonstick skillet. Place palm-sized amounts of the mix into the pan. Using a spatula, squash the mixture down to compact the vegetables and make it easier to flip and hold together.
Cook until golden on both sides, adding more oil if needed. Place onto paper towel when cooked. Continue until all the mixture is gone.
