Green Goodness Frittata

Clear out your veggie drawer and put your wilting greens to good use with this easy, wholesome frittata. Perfect for any meal, try our favourite combo of peas, broccoli and spinach!

Tips & Tricks
  • This dish is a great way to use up last night's leftover roast vegetables, or a chance for you to dive into your freezer and get rid of some frozen veggies. Last-leg leafy greens like silverbeet and kale are also great additions!
  • If you don’t have a cast iron or oven-proof pan, use a cake tin to bake your frittata.
  • Take your frittata game up a level by adding a handful of crumbled feta before popping in the oven.

Ingredients

  • 10 Pams Free Range Eggs
  • 300ml bottle Pams Cream
  • 1 medium head of broccoli, finely chopped
  • 1 cup Pams Frozen Peas
  • 1 bag Pams Baby Spinach
  • 1 Pams Red Onion

Method

  1. Crack the eggs into a bowl and whisk well, add the cream and whisk again. Season to taste.
  2. To a large frying pan, add the broccoli, peas and the spinach. Add a little oil, generously season, then sauté for 5 minutes on high-heat, or until the vegetables are tender.
  3. Spray a large cast iron pan or baking dish with some oil, pour the egg mix in and then sprinkle over the sauteed vegetables.
  4. Slice the red onion and sprinkle over the top of the frittata. Place in the oven at 180° fan bake for 25 minutes or until there is no wobble in the middle.
  5. Cut into slices and serve alongside a generous dollop of tomato relish.
