Satay Tofu Skewers

These tofu skewers are a delicious addition to your BBQ potluck with friends, or simply served alongside some steamed rice with veggies for a tasty midweek dinner!

Tips & Tricks

  • Makrut lime leaves add a great flavour to satays. Add a few sliced leaves to the satay sauce when cooking over medium heat.

Method

  1. Place the tofu cubes in a large mixing bowl and drizzle generously with oil and season with salt & pepper. Toss to coat.

  2. Pierce 4 - 5 tofu cubes each onto Pams 15cm Bamboo Skewers, repeating with all the tofu. Grill on the BBQ, or in a frypan over a medium high heat for 10 – 15 minutes, turning regularly until lightly charred on all sides.

  3. While the skewers are grilling, add the curry paste, peanut butter, coconut milk and soy sauce to a small pot on medium heat. Cook for 3 – 4 minutes, whisking until the sauce is well combined and thickened.

  4. Remove from the heat, add the lime zest & juice, and whisk well.

  5. Serve the skewers with satay sauce on the side for dipping, and a scattering of lime wedges.

Ingredients

  • 1 packet Pams Plant Based Firm Tofu, cut into 2cm cubes

  • 1 Tbsp red curry paste (make sure to check this is vegan friendly!)

  • 2 Tbsp Pams Smooth Peanut Butter

  • ¼ cup Pams Coconut Milk

  • 2 Tbsp Pams Soy Sauce

  • 2 Pams Limes, juice & zest - plus extra wedges for serving
